It’s a new chapter for a Centerville restaurant that has seen quite a few ups and downs.
Chef Keith Taylor is opening his new Root 48 at 79 South Main St. in Centerville but the name should sound familiar – it’s the third concept in a year, after some quirky happenings have forced changes.
The new restaurant, unlike its upscale predecessor, will be a very approachable bar with a menu of burgers, wings, soups, salads and sandwiches. With televisions and more of a sports bar concept, it will bring more lunch options to downtown Centerville.
“It will be more of a bar and grill,” Keith says. “It will have some craft beers, and a real focus on the drinks, a lot of kinds of alcohol for specialty drinks.”
But change is the norm for Chef Keith, and he’s come back to bat with a whole new host of foods. The wings will come in a number of house-concocted sauces such as a parmesan garlic recipe, a “raw evil” ghost chili pepper mix, and others. The burgers will be build-your-own with such ingredients to add as peanut butter and fried eggs.
“It’s a much more laid back environment.” Keith says. “People who have tried it so far are happy with the menu.”
Taylor’s seen the restaurant through some interesting times – he operated the spot as classy wine bar Savona until March of last year, when an out-of-control car changed its direction. After three months of repairs (and food donated to One Bistro) it reopened as Twisted Root Restaurant and Bar, an upscale dining establishment. Only to have to rebrand that in December after a chain of Texas restaurants of the same name raised a stink.
Root 48 will host its grand opening Friday!
