January 22, 2025 Brady Kress (President and CEO of Dayton History) and Eric Evans announced a collaboration between Carillon Brewing Co. and Dayton Barbecue Company. A soft opening is planned starting February 12, 2025 and a Grand Re-Opening on March 17, 2025.
Dayton Barbecue Company customers can expect favorites such as pulled pork and brisket meat platters, smoked fried wings, salads and the “Smoked Stack,” a double patty burger with brisket, pulled pork, house made pickles and red onions. Their plans also include serving locally made sausages on Dorothy Lane Market buns. All sauces and dressings will be made from scratch.
